I do want to get paperless working again, I screwed up the container and haven't gotten it going again. but I think it's too much for what I'm trying for
Just tested it and Keep notes allows you to add photo and it opens the camera. The picture does not show in my immich. Sadly Keep is a Google product though.

You can check out LabLog app on f-droid.
You save key value pairs, where you define keys yourself. And values can be text or photos.

I don't think this is what I'm looking for, but it looks awesome for the right application. Awesome job!
On my graphene OS phone i use the Pixel camera for normal photos (networking permission denied), which get synced to Immich.
Then in the stock Graphene camera app it lets me change the location where pictures are saved, so i just set it to a folder not monitored by Immich and i use that for throwaway pictures of things like you mentioned.
