You're absolutely right! Cutting the yellow and white striped wire causes the countdown to speed up dramatically. I would be happy to write a summary of the relevant pages of the defusal manual explaining what went wrong and how to avoid having this happen again in the future, as well as the correct steps to finish defusing your current bomb.
