Fuck 'em. Add AI to the front of everything on your resume and apply at a startup.
I feel like if they could successfully bullshit like that, they wouldn't be in that situation in the first place. Or they have some kind of health issue that makes it literally impossible to work any kind of job, even if they make it through the application process.
Have you shopped your resume around with friends or family? Or stripped identifying info and posted it here? Blind spots happen with resumes and a little outside perspective can help with targeting it to the job you want.
