why not a genuine piece of pre-AI coding art like Windows Vista, Windows ME or the absolute pinacle of software: Slackware 9.1 before they switched to the awful X.org server from the beautiful XFree86?

FreeDOS actually does have an anti AI policy, at least when it comes to code commits: https://www.freedos.org/about/ai/ So you might be onto something here!
