How about bit, pecked, headbutted, divebombed, clawed, flew into, you know something informative
To be more accurate, the bird flew into a camera rigged on the front of the coaster intended to capture Fabio's reaction during the ride. None of that footage was used because that camera didn't survive the impact with the bird, and pieces of it are what hit Fabio's nose. At that time cameras weren't able to wirelessly transmit digital video. So anything it recorded was lost.
So, sliced might be the best word to describe the interaction.
The swan sliced him? I like nuked better.
Tell you what, here is a compromise; the Swan OBLITERATED the camera, and the camera fragment sliced Fabio. Could also say the camera DEVASTATED the Swan.
Though also, to be more accurate, no swan was involved. It was a goose.
It was only important to the point this person was trying to stretch over the incident that the bird be a swan, as it metaphorically related better that way.

On a 9th grade trip to six flags, we were riding the brand-new Titan roller coaster, and my girlfriend at the time decided to ride with her best friend while I rode with the friends BF. We rode the train after, and when we got off she was standing on the platform covered in blood getting screamed at by some woman who had been riding behind her claiming that my GF had bled all over her on the ride. It turned out that someone at the very front of the ride got hit in the face with a bird on the first big drop and sprayed blood all over everyone behind them the rest of the ride.
Yelling at anyone that's bleeding is unhinged but a 14 year old covered in blood???
Yeah, it was quite the scene. My girlfriend's friend was screaming right back at her and was about to get in a fist fight with the woman. Her BF had to hold her back.

This reminds me of a time I took a highly religious friend for a hike through the Australian landscape. As we were walking through I mentioned the specific area we were about to walk through was an indigenous shamanic area and we should be respectful. He immediately choked on a fly.
Told me after that he was scoffing in his mind at a "shamanic area" when the fly flew down his throat.

You don't normally get blood on that part of the nose.
The bits of the camera that the bird hit, cut the bridge of Fabio's nose. Probably most of the blood we see in the shots is indeed Fabio's.

I was under the impression it was a ride issue, and Fabio didn't want their reputation ruined, so he called it a bird. Regardless, it's not nearly as clear cut as the image would have you believe. https://www.snopes.com/fact-check/fabio-hit-goose-rollercoaster/
Read this Snopes article. Fabio never claimed the goose hit him, he said the goose hit a video camera in front of him, there to record his ride for a promotional video he signed up to do. A piece of the destroyed camera hit him on the nose causing a small cut that required one stitch. He refused to take part in suing the rider operator.

Edit because TrackinDaKraken already posted much the same thing. I will add though that the link says nothing about wanting to protect their reputation. In fact, in one interview quoted he clearly wants the ride shut down or fixed.
In a 1999 local news interview at the end of the clip, Fabio was visibly upset about the incident, "It wasn't a freak accident, and it's going to happen again, and I cannot live in my conscience to know that the ride is still running. And even a person, even a child, can be killed."
Wasn't it a goose?
The media got the story wrong (he wasn't hit by a bird) but...they never reported it was a swan.
Because this part is also wrong (it was a goose)
