I hate the feeling of getting even a tiny bit of food on my face so I have to cut the mango into delicate pieces.

Cut the mango into two cheeks, like people do for the 'cubes' trick. But instead of cutting as a criss-cross, just cut the long lines - the whole way through.

Now you have strips of mango with skin on one side, lay the skin side down and starting at one end, get your knife and lay almost flat parallel to the chopping borad and cut 1mm above the skin, slide the knife along the mango strip rolling it as you go so the skin is always in contact with the chopping board.
(Reminds me strongly of fish filleting technique).

It will perfectly skin the strip of mango and now you can chop it or eat as you wish.

No wastage trying to cut out or scoop with a spoon on the 'cubes’ trick.
