Any recommendations on what country to VPN through?

Not specifically no. Either you’ll want a country with good privacy laws that will make it bureaucratically challenging to get your VPN provider’s logs (the provider should be in such a country as well) or a country that isn’t in great terms with this one.

But the location of the operator in important too. If you’re using a VPN server in Somaliland (I don’t even know if such a thing exists), but the operator is in Pittsburgh - you’re not doing yourself any favors.
