I assumed they were referencing A Knight of the Seven Kingdoms, the Game of Thrones spinoff

Thanks, turns out it's the first result when you google "Hedge Knight".
Didn't have it on my radar, I'll check it out (with no high expectations to be honest).

Three novellas have been published – The Hedge Knight (1998), The Sworn Sword (2003), and The Mystery Knight (2010) – and Martin has stated his intention to continue the series.

George RR Martin has outlined plans for as many as 12 additional Dunk & Egg stories, extending the lives of Ser Duncan the Tall and his squire Egg beyond the three novellas published to date.

Oh for fucks sake!

It's awesome. So much better than I expected. Much more down to earth and heartfelt than House of the Dragon. Yesterdays episode is a 9.8 on imdb and absolutely deservedly so. Fairly short episodes of 30-40 min. I highly recommend it

Thank you for the recommendation.
I'm thoroughly enjoying it.
