Why, just Bulgarian restaurants work a bit differently. Sides are never included and must be asked, even bread is ordered separately, but it's dirt cheap and wait staff will politely ask if you'd like to add any to your order in case you forgot.

This should be the way.

I hate how ordering something gives you an obligation to fries, or rice, or whatever.

I might want a burger with some wings instead.

i have a reputation at my favorite greek restaurant for ordering something that is not supposed to be an entree, but ordering a meal sized portion and sharing it with everyone at the table (last time was a ton of dolmades, time before was a plate of fries covered in gyro and tzatziki). they love me because they never know what i'm going to order and the floor staff usually takes bets on how long it will take and how much of it my skinny ass is going to finish (not long enough and all of it is the owner's usual bet, she usually wins). it is a great restaurant.
